Blogmas Day 8: Red Velvet cupcakes recipe (or at least I tried that flavour)

I decided to get baking over the weekend and delved into baking red velvet cupcakes. I'd never made them before but love eating that flavour of cake. 


Well when I made the mixture it tasted like red velvet but the cooked cakes didn't so much. They still tasted alright so here's a recipe for some kind of redy/brown/chocolate cupcakes.



I was using the book you see in the back of the picture and the ingredients it told me I needed were:

175g gluten-free self raising flour (I used normal though)
1 tsp xanthan gum (didn't use because I had no idea what it was)
3 tbsp cocoa powder
1 tsp cream of tar tar
85g unsalted butter
150g caster sugar
2 large eggs
2 tbsp red food colouring
2 tsp vanilla extract
1 tsp cider vinegar
200ml buttermilk

In a bowl you mix the flour, cocoa powder and cream of tar tar. 
In another bowl, whisk the butter and sugar and add the eggs one at a time. 
You then add half of the dry mixture into the wet one with the food colouring. And mix that. 
Once it's whisked, you add the other half of the mixture. Now my mixture went into the oven looking like a red velvet cupcake and tasting like it. 
But it came out looking like a normal chocolate cupcake. Anyway I did decorate it with butter cream icing (which I'm also still yet to fully master)

I also filled the inside with chocolate spread and jam to try and make it taste more red velvetty. But I'm not sure if it worked. The cupcakes seemed to taste nice anyway so can't complain too much. 


I definitely get the feeling I'm going to be baking more over Christmas if I get time. Let me know what you love to bake. And if you can enlighten me on how to make an actual red velvet cupcake.
